something to warm the soul & stomach



this is a borrowed recipe from my friend beth {which she got from her sister jill}. it is so yummy and warms you all the way to your toes {especially on these cool/cold fall days we've been having}. so i hope you can make it and enjoy it with your family... {on a side note- for our family this really isn't alot, so you could double it so you can have some leftovers too}


white bean chicken chili~

1 lb chicken diced/chopped into bite sized bites {i use 4 boneless skinless chicken breast}
1 medium onion chopped
1 1/2 teaspoon garlic powder or 3 cloves fresh garlic depending on taste {i just put one heaping teaspoon full of minced garlic}
1 tablespoon oil

heat pan, add oil and then add chicken, onion and garlic.
cook until chicken is done.

add:
1 teaspoon salt
1 teaspoon chili powder
1 teaspoon pepper
1/4 teaspoon cayenne pepper
2 cans white beans {drained and rinsed}
2-4oz cans diced green chilies
1 can chicken broth

bring to a boil, then reduce heat to low {ish} and cook uncovered for 20 minutes... stir occasionally

with heat on low, add:

1 cup sour cream
1/2 cup whipping cream

combine in with chili and let warm thru

this is yummy with grated cheese, crushed tortilla chips, avocados and an extra dollop of sour cream {in case you didn't get enough in it :)}

it is so good, i'm hungry for it now {gosh, why is food so darn good?}

i tend to make cornbread with this as well. let me explain something to you about me and cornbread- it is like dessert to me..... hold on a moment while i think about it.......

okay, i'm back. i use the jiffy brand- i make the "johnny bread" and add 1 tablespoon sugar to it {letting it sit an extra minute in the bowl to allow it to "rise". {how to do you think i got so fat? eating health?} hahaha
